pb white chocolate protein bars

I love protein bars as a quick breakfast or snack, but I hate ones that taste like chalk or have a bunch of ingredients that I can’t pronouce. Thus, I decided to make my own. This was my first batch and I think they turned out pretty well!

Ingredients

  • Rolled oats (1 1/2 C)
  • Vanilla protein powder (3/4 C) I like Just Ingredients French Vanilla
  • Unsweetened almond milk (1/4 C + 2 Tb)
  • Natural peanut butter (1/2 C) I like Kirkland brand from Costco
  • Flaxseed (2 Tbsp.)
  • Mini white chocolate chips (2 Tbsp.)

Directions:

Mix together dry ingredients (all but white chocolate chips). Mix together wet ingredients and then combine with dry. Line an 8×8 plan with parchment paper and then press mixture into pan. Sprinkle shite chocolate chips on top and press into mixture. Refrigerate for at least one hour and then cut into 8 bars.

Nutrition:

According to ChatGPT, this meal has roughly the following per bar:

215 calories, 15g protein, 11g fat, 11g carbs, 3g fiber

Let me know what you think!
