You’ve probably seen a version of this recipe on the internet at some point. It’s super easy and low in calories. It’s my go-to for cold nights when I need to feed a crowd. Enjoy!

Ingredients (10 servings)

  • Butter (1 Tbsp.)
  • Lean ground beef (1 lb)
  • Onion, chopped (1 medium)
  • Garlic, minced (4 cloves)
  • Petite diced tomatoes, with juice (2 cans)
  • Black beans, rinsed (14 oz can)
  • Pinto beans, rinsed (14 oz can)
  • Corn, drained (14 oz can)
  • Diced green chiles (2, 4 oz cans)
  • Crushed tomatoes (28 oz can)
  • Ranch seasoning (1 oz packet)
  • Taco seasoning (1 oz packet)
  • Optional toppings: Greek yogurt or sour cream, shredded cheddar, avocado, cilantro, pickled jalapeños, tortilla chips

Directions

  • Heat butter in a large pot over medium heat.
  • Add onion and cook 3-4 minutes until softened.
  • Add garlic and ground beef; cook until meat is no longer pink.
  • Add remaining ingredients to pot. Bring to a boil and then simmer 20 minutes for flavors to blend.
  • Serve with any toppings you like! I prefer Greek yogurt, avocado and pickled jalapeños.
