
You’ve probably seen a version of this recipe on the internet at some point. It’s super easy and low in calories. It’s my go-to for cold nights when I need to feed a crowd. Enjoy!
Ingredients (10 servings)
- Butter (1 Tbsp.)
- Lean ground beef (1 lb)
- Onion, chopped (1 medium)
- Garlic, minced (4 cloves)
- Petite diced tomatoes, with juice (2 cans)
- Black beans, rinsed (14 oz can)
- Pinto beans, rinsed (14 oz can)
- Corn, drained (14 oz can)
- Diced green chiles (2, 4 oz cans)
- Crushed tomatoes (28 oz can)
- Ranch seasoning (1 oz packet)
- Taco seasoning (1 oz packet)
- Optional toppings: Greek yogurt or sour cream, shredded cheddar, avocado, cilantro, pickled jalapeños, tortilla chips
Directions
- Heat butter in a large pot over medium heat.
- Add onion and cook 3-4 minutes until softened.
- Add garlic and ground beef; cook until meat is no longer pink.
- Add remaining ingredients to pot. Bring to a boil and then simmer 20 minutes for flavors to blend.
- Serve with any toppings you like! I prefer Greek yogurt, avocado and pickled jalapeños.
