turkey white bean chili

Got leftover turkey from Thanksgiving? I used mine for this white bean chili and it was delicious. My turkey was smoked, so it had a great smokey flavor. It’s a great way to eat the leftovers but without feeling like you’re eating Thanksgiving dinner for the fifth time — enjoy!

Ingredients (4 servings)

  • Cooked turkey, shredded or chopped (3 C)
  • Olive oil (1 Tbsp.)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Diced green chiles (4 oz can)
  • Great Northern beans, drained (15 oz can)
  • Chicken or turkey broth (2 C)
  • Corn — fresh, canned or frozen (1 C)
  • Cumin (1 tsp)
  • Chili powder (1 tsp)
  • Oregano (1/2 tsp)
  • Salt + pepper (to taste)
  • Optional: Greek yogurt, cilantro, lime

Directions

  • Heat olive oil in a pot over medium heat.
  • Add onion and cook 3-4 minutes until softened.
  • Stir in garlic, spices and green chiles; cook 1 minute.
  • Add turkey, beans, corn and broth.
  • Bring to a simmer and cook 10-15 minutes.
  • Top with Greek yogurt, lime and cilantro.

This is my new favorite way to enjoy Thanksgiving leftovers!
