
Got leftover turkey from Thanksgiving? I used mine for this white bean chili and it was delicious. My turkey was smoked, so it had a great smokey flavor. It’s a great way to eat the leftovers but without feeling like you’re eating Thanksgiving dinner for the fifth time — enjoy!
Ingredients (4 servings)
- Cooked turkey, shredded or chopped (3 C)
- Olive oil (1 Tbsp.)
- 1 medium onion, diced
- 2 cloves garlic, minced
- Diced green chiles (4 oz can)
- Great Northern beans, drained (15 oz can)
- Chicken or turkey broth (2 C)
- Corn — fresh, canned or frozen (1 C)
- Cumin (1 tsp)
- Chili powder (1 tsp)
- Oregano (1/2 tsp)
- Salt + pepper (to taste)
- Optional: Greek yogurt, cilantro, lime
Directions
- Heat olive oil in a pot over medium heat.
- Add onion and cook 3-4 minutes until softened.
- Stir in garlic, spices and green chiles; cook 1 minute.
- Add turkey, beans, corn and broth.
- Bring to a simmer and cook 10-15 minutes.
- Top with Greek yogurt, lime and cilantro.
