
Here’s one of my go-to lunches to meal prep for the week. Just increase the amount you buy of each item based on the number of salads you want to make. Easy peasy!
Ingredients (per salad)
- Cherry tomatoes, small (¼ C)
- English cucumber, diced (½ C)
- Kale, chopped (3 C)
- Rotisserie chicken, diced (½ C)
- Kalmata olives, sliced (1 Tbsp.)
- Hemp seeds (1 Tbsp.)
- Picked red onion (1-2 Tbsp.)
- Optional: Feta cheese, crumbled (1 Tbsp.)
- Dressing: Tzatziki sauce (2 Tbsp.) or lemon juice — I like the tzatziki sauce from Trader Joe’s!
Directions:
Add your kale to a meal-prep container (like these) and then layer on the toppings. I’ve found that mine last about a week.
